Miguel Estela is a second‑generation producer who moved from Cutervo to San Ignacio as a teenager and now farms with his young family, focused on pushing quality at Finca El Morito. 

The Flores family have cultivated coffee in Cajamarca since the 1970s, with Finca El Morito founded in 2009 and now recognised in Cup of Excellence for its quality-driven, community-based production. Miguel Estela makes up one of the many families within the Finca El Morito collective.

Cherries above 18° Brix are selectively picked, double fermented; 36 hours in cherry and 48 hours in mucilage, then washed and dried slowly in solar dryers for 20–25 days for clarity and sweetness in the cup.
